the best chicken salad

I have a fantastic recipe to share with you today .. the absolute BEST chicken salad!


This is one of my favorite meals that is also great for a picnic lunch. This recipe comes from The Pioneer Woman.

Ingredients:
  • 2 chicken breasts boiled and shredded
  • 2 stalks (to 3 Stalks) Celery, Chopped
  • 3 whole Green Onions, Chopped
  • 2 cups (to 3 Cups) Grapes, Halved
  • 1/2 cup Mayonnaise
  • 1/2 cup Plain Yogurt Or Sour Cream
  • 1/2 cup Half-and-half or milk
  • A Small Handful Of Fresh Dill, Minced
  • 1 Tablespoon (to 2 Tablespoons) Brown Sugar
  • Juice Of One Lemon or a small amount of vinegar
  • Salt To Taste
  • Ground Black Pepper To Taste
Instructions
  1.  Boil chicken and shred.
  2. Chop all fruits and veggies and place them in a bowl with the chicken.
  3. In another bowl mix mayonnaise, yogurt or sourcream, lemon juice or vinegar, brown sugar, salt and pepper. Add your fresh herbs- dill, cilranto, whatever you like!
  4. When the dressing tastes just right our it over the chicken/veggie/fruit mixture and stir gently. Add some bacon bits for crunch!
  5. Allow the salad to chill for several hours.
I don't eat nuts, but lots of people like to add almonds to their chicken salad. Our favorite way to enjoy this chicken salad is on toasted bread or a crossiant. The Pioneer Woman suggests serving with mustard and on a bed of lettuce or spinach ... haven't tried that yet though.
