This is one of my favorite meals that is also great for a picnic lunch. This recipe comes from The Pioneer Woman.
Ingredients:
- 2 chicken breasts boiled and shredded
- 2 stalks (to 3 Stalks) Celery, Chopped
- 3 whole Green Onions, Chopped
- 2 cups (to 3 Cups) Grapes, Halved
- 1/2 cup Mayonnaise
- 1/2 cup Plain Yogurt Or Sour Cream
- 1/2 cup Half-and-half or milk
- A Small Handful Of Fresh Dill, Minced
- 1 Tablespoon (to 2 Tablespoons) Brown Sugar
- Juice Of One Lemon or a small amount of vinegar
- Salt To Taste
- Ground Black Pepper To Taste
Instructions
- Boil chicken and shred.
- Chop all fruits and veggies and place them in a bowl with the chicken.
- In another bowl mix mayonnaise, yogurt or sourcream, lemon juice or vinegar, brown sugar, salt and pepper. Add your fresh herbs- dill, cilranto, whatever you like!
- When the dressing tastes just right our it over the chicken/veggie/fruit mixture and stir gently. Add some bacon bits for crunch!
- Allow the salad to chill for several hours.
