easy crockpot mexican chicken

Happy Monday friends!

Tonight for dinner the hubby made some yummy taquitos and I wanted to share a bit of the recipe with you!

Do you know how time consuming boiling and shredding chicken can be? Not my favorite job- nor my husbands! I came across a much easier way to make shredded chicken- Mexican style! And yes, it is the crockpot to the rescue!



Simply add 2 whole chicken breasts (with the fat cut off of course) with about a cup of salsa to your crockpot. Turn on low and cook all day! When your ready to use the chicken simply stir and it literally shreds itself, no labor intensive work required! It comes out tender and full of flavor. We have used this chicken to make taco's, taquito's, soup, and other Mexican inspired dishes.

  1. We tried your recipes last weekend and it was AMAZING!! I also have a friend who said she adds black beans and corn in the crock pot for extra flavor. Thanks for the recipe! :-)
